"The New German Cookbook," by Jean Anderson and Hedy Würz. The sauerbraten recipe ("Rheinischer Sauerbraten mit Rosinensauce"), rich, mellow, and not overly pickly or sour, is to die for, and is worth the price of the book.

I want to try out a recipe for a beef stew which is supposed to be cooked in a Dutch oven for 2hrs at a temp of 300 degrees. I don't have a Dutch oven but I do have a stainless steel stockpot that is oven safe.

The editor says this claim is questionable, bu that fresh hay does give a sweet and appealing fragrance to the meat. Any mild-tasting smoked or salted cut of pork would work. Ideally your hay will have been recently cut and dried in the sun, otherwise use alfalfa hay purchased from pet shops (alfalfa hay is the sweetest).

Another great eggplant recipe is Paula Wolfert's Chicken with tomato eggplant "jam". It's a Moroccan recipe and I'll post it if you are interested. It's truly delish and the eggplant melts into the sauce and can't be distinquished as eggplant. I've served it to raves from a couple of people who don't like any veg very much and hate eggplant.

So many recipes call for adding "salt to taste", and I often find that I don't add enough. For example, last night I made lamb kofte, using 1.25 pounds of lamb, and they were decidedly undersalted - but of course I don't know how much I added - maybe a large pinch.

It seems like every week, I buy a big bag of spinach, and end up with about half of it left on Sundays. It's not really rotten at all, but it's starting to get old and I can tell it wouldn't really be fresh enough to use in a spinach salad.

I had my first encounter with eye of round roast tonight. I hate to say it but I think the roast won out. I took heart from an older thread about the CI method of salting the roast (3 pounder) for 24 hours (check), searing then slow roasting in a 225 degree over until internal temp of 115 (check) and let it sit in the oven until that bad boy hit 125 (bam!).

My local Thai restaurant uses spearmint in place of Thai basil quite often. I discovered that a few mint leaves with melon and prosciutto is nice and looks a bit fancy on the plate. It went over well at our last block party.

I can't get beef consomme at my grocery store. I am planning on trying a Rachael Ray recipe for French Onion Soup topped French bread pizza. After caramelizing onions and deglazing with sherry, you are supposed to add a can of beef consomme and cook to thicken up. you use this as a topping over french bread.
